Bringing more pastry to the already sugar-soaked Rue des Martyrs may seem crazy, but Sébastien Gaudard’s shining résumé proves he's the man to do it. Having worked alongside Pierre Hermé at Fauchon and then at the Bon Marché, he knows a thing or two about the trade. His shop, which opened in late 2011, is sleek and inviting, its neatly arranged window displays of pastries, chocolates and artisan ice creams luring in hungry locals by the bucketload. Once inside, you're presented with seemingly every variety of cake, patisserie and conserve under the soleil, each as appetising as the next. So stop in for a simple croissant or something a bit more elaborate – the lemon tarts are one of the best in the city – and do try to catch a glimpse of the man behind the magic if he’s in the kitchen.
