Vin et Maree Maine restaurant in Paris’ Montparnasse quarter is a restaurant – or, in this case, a small chain of restaurants – dedicated to the banquet of the sea and the pleasures of the grape. With close relationships with small-boat fishermen, particularly in Brittany and Normandy, Vin et Maree guarantees the freshest seasonal seafood possible -- here the fish are on display to you can see for yourself. The preparations tend toward simplicity so the flavours shine through, and the wine list tends toward whites to complement them. The vast exterior sets the tone with brilliant white and blue sailor décor, and inside you’ll find cedar walls with sea-themed ceramic art and Breton products on the white-linened tables. The menu changes with the tides, as it were – another sign of true freshness.
