Discover heady ice cream flavours and spicy sorbets at this permanent boutique from the experimental minds behind the Glaces Glazed van.

This ice cream boutique is from the same experimental team behind the roving Glaces Glazed van, which has steadily become a summer fixture in Paris. They’ve chosen the Rue des Martyrs as their HQ and now offer their speciality ices in a permanent setting.

Painted entirely black, the little shop has only one little table inside and one outside. But the neighbourhood has been very well chosen: there are a number of parks close by, so rather than eating in situ, you can tuck into your ice cream while basking in the neighbourhood greenery.

You’ll find twenty or so flavours here, covering both sorbets and ice creams. Some recipes are rather out-there: try, if you dare, the Grog ‘n’ Roll (orange, whiskey, chilli and ginger) or the Voodoo Chile (caramelised banana and curry spice). If you’re feeling less adventurous, you can always settle for a few more ordinary flavours, including some quite standard chocolatey varieties.

Generally speaking, although the recipes here appear to be quite ambitious, many ingredients aren’t even noticeable (we can’t, for example, make out any of the Espelette spice in the mango ice cream). Still, it’s worth stopping here to sample some of the more successfully potent recipes.
