"Chef Ed Vigil goal with the cuisine for ATwater Tavern is to obtain uniquely Bay area and California ingredients, handle them with finesse and passion by our highly trained culinary team, to then deliver our guests with a evocative and unique food story experience.
We will ground our culinary focus in the story of San Francisco, its people, its waters and its history. Reaching out to the lush California regions surrounding us, we will use red oak fire in a historic Santa Maria grill to cook our storied foods in our profound ""local"" way. So we will then strive every day to achieve this goal through classic techniques of execution, and obtaining the freshest possible quality ingredients from our local partners.
