Boccalino Spring Delight Menu @ the Four Seasons Hotel Seoul

Four Season’s Italian restaurant Boccalino has appointed Ciro Petrone as its new head chef. Petrone has extensive experience at Milan’s Michelin-starred restaurants (Vun and L’Olivo) and served as the head chef at Tosca, one of Hong Kong’s Michelin-starred venues, for four years. Headed by chef Petrone, Boccalino will be serving a new line of delicate dishes exclusively for this spring season. Showcasing chef Petrone’s culinary philosophies, the 9 dishes that make up the ‘Spring Delight’ promotion range from delectable appetizers, soups, pastas, pizzas and steaks. This exclusive spring promotion will incorporate a wide array of season-highlighting ingredients including asparagus, zucchini blossoms and fava beans. Two of the particularly exciting dishes are the cheesy spaghettoni with pecorino sauce and the poached egg served with asparagus ragout which is boiled down in parmesan cheese sauce.
