Butcher's Cut is owned by Samwon Garden, the oldest and biggest Korean BBQ restaurant in Gangnam. Since its parent company Samwon Garden has been an established presence in the BBQ business for over 35 years, the quality of meat at Butcher’s Cut is assured. Their signature menu items like prime rib, rib-eye and New York strip all go through their self-developed dry aging process, and are taken through authentic American processes and presentation. The dry aging process, a trend currently spreading among steakhouses in Korea, is taken one step further at Butcher's Cut: the meat undergoes an extra aging step with moisturization before going through the more classic dry aging process. The resulting meat when cooked is crispy on the outside and moist on the inside, a texture especially beloved in Korea. Order a colourful cob salad with generous helpings of tomato, cheese, avocado and eggs and the creamy mac & cheese and you might believe for just a second that you've been transported to the American midwest. If you've worked up an appetite of American proportions, Butcher's Cut also operates a brunch buffet bar with burgers, sandwiches and steak.
