At just 23, João Sá opened his first restaurant, G-Spot, in Sintra, where he stood out for his bold approach of renewing the menu weekly for four years without repeating a single dish. He now leads Sála, in Lisbon, awarded a Michelin star, where he develops a constantly evolving cuisine inspired by his African roots and the city’s multiculturalism. At the Time Out Market, he showcases his creative signature in dishes such as the savoury mushroom pastel de nata, the lamb and mint savoury doughnut, and a cozido à portuguesa ramen.
