Daniel Calvert to open his first independent restaurant in Tokyo this October

The acclaimed chef is set to open Chez Calvert at Azabudai Hills on October 1

After earning three Michelin stars for Sézanne at Four Seasons Hotel Tokyo at Marunouchi, chef Daniel Calvert announced earlier this year that he would leave the hotel restaurant after five years. While many wondered what his next move would be, it’s now been revealed: Calvert’s first independent restaurant, Chez Calvert, will open at Azabudai Hills on October 1.

Hailing from the UK, Calvert honed his skills at some of the world’s best kitchens in London, New York and Paris before taking charge at Belon in Hong Kong. In 2021, he moved to Tokyo to open Sézanne, leading the restaurant to three Michelin stars within just three years, as well as the No 1 spot in Asia’s 50 Best Restaurants and No 7 in The World’s 50 Best Restaurants. Calvert was also awarded the British Empire Medal in 2026 for his contributions to the culinary arts and UK-Japan culinary relations.

So far, little has been revealed about the new restaurant, but Calvert is working closely with architectural designer John Pawson to create an elegant, minimalist interior, while the cuisine will be rooted in French tradition and showcase Japan’s exceptional seasonal ingredients.
