Tokyo’s hottest new pizza spot is finally here, and you’ll find it at The Bulgari Bar at Bulgari Hotel Tokyo. Officially launched on September 5, Pizza Bar – Pier Daniele Seu is a pizza experience that has previously been offered at other Bulgari hotels, including in Rome and Dubai, and has now arrived in the capital. It features eight special pizzas developed in collaboration with acclaimed pizzaiolo Pier Daniele Seu, alongside curated cocktail pairings and wines.
Hailing from Rome, Pier Daniele Seu is considered one of the chefs at the forefront of today’s gourmet pizza scene and has been collaborating with Bulgari Resorts since 2020. His menu for Bulgari Resort Dubai earned the hotel 14th place in the 50 Top Pizza Asia-Pacific ranking in 2025.
Beyond his work with Bulgari, Seu runs his own restaurant in Rome, Seu Pizza Illuminati, and was named the world’s Best Pizza Chef in 2019 by 50 Top Pizza. The restaurant currently ranks second in Italy and sixth globally on the 50 Top Pizza lists, while Seu’s eggplant-based pizza, Variazione di Melanzane, was named Pizza of the Year 2026 – and can now be enjoyed here in Tokyo.
At the heart of Seu’s pizza creations is his signature 70-percent hydration dough, made with a mix of type 0 and 1 flours and left to rise for 30 hours. The result of this long fermentation is a light and airy crust that provides the perfect base for his unique combinations of toppings.
The Tokyo menu features eight pizzas, ranging from the classic Margherita DOP, topped with roasted tomato sauce and mozzarella treccia, to the aforementioned Variazione di Melanzane, made with eggplant cream, grilled eggplant, almond cream, mint, basil and beetroot powder. Other unique creations include the Cocktail Di Gamberi, inspired by shrimp cocktail and topped with Amaebi and lettuce cream, and the refreshing Formaggi e Limone, a white pizza featuring parmesan cream, blue cheese and lemon jam.
For those with a sweet tooth, don’t miss the Ricotta and Pears dessert pizza, topped with ricotta cheese, caramelised and puréed pears, walnuts, chocolate cream and lemon balm.
The Tokyo pizza menu is complemented by a curated selection of cocktail pairings, alongside Franciacorta wines from Italian winery Bellavista. Each cocktail has been thoughtfully selected by the bar’s head of mixology, Andrea Minarelli, and is exclusive to the Pizza Bar menu. The selection includes both sweet and savoury creations, such as the Pomo-tini, made with tomato water, Nikka Vodka and Akkeshi Whisky Rikka, and the Anita, a carrot-based cocktail featuring Woodford Reserve, toasted hazelnut, orange juice and Disaronno.
