Navigating diners through these cuisines is acclaimed chef Chiaki Naito, who trained at L’Effervescence before going on to serve as head chef at An Di in Gaienmae.
At Night Market, each dish incorporates authentic regional cooking techniques and essential herbs and spices, all reimagined with Naito’s inimitable flair. The drink pairings are curated by Terumasa Kobayashi, a sommelier who previously worked alongside Naito at An Di and knows the chef’s culinary style inside and out. The selection includes a range of wines that pair perfectly with the signature sour and spicy notes typical of Southeast Asian cuisines.
