Chef Shusaku Toba from French-Japanese fusion restaurant Sio has opened up a temporary burger shop with the students at L’Ecole Vantan culinary school in Daikanyama. Genkai Burger offers just one main dish: a luxurious Kobe beef truffle cheeseburger offered at an unbeatable price of ¥990 each.
The multi-layered burger has black truffle shavings, a fried egg, a slice of Italian parmesan cheese, red wine sauteed mushrooms, a 100-percent Kobe beef patty, lotus root, tomato and wild rocket, sandwiched between sesame buns from Mine-ya Bakery. All these components are meant to hit all five basic flavour profiles – salty, sweet, sour, bitter and umami – plus a fragrant aroma and texture that you just won’t find in most burgers.
Get a side of salted Hokkaido potato fries (¥110) offered in lemon and tomato flavours, and maybe a craft lemonade (¥150) or a beer (from ¥360) to wash it all down. Despite its pedigree, the pop-up burger shop has deliberately kept things affordable so it can offer students at L’Ecole Vantan the opportunity to see what running a restaurant is really like.
Genkai Burger only serves 100 burgers per day and you'll need a numbered a ticket to buy one. Are distributed from 10am each day. This unusual restaurant is only open for a limited time, so make sure you visit before it’s gone.
