Do you want the funk, the whole funk, and nothing but the funk? Well you're in luck, because we've let our employees loose to create 10 different beers using various strains of brettanomyces, the funkiest yeast you've ever tasted.

Is that not enough funk for you? You want more? Okay, we're also going to be releasing 22 oz bottles of Red Brick's first ever sour beer, Solera Project no. 1. A blend of ales aged in an oak barrel with multiple strains of brettanomyces and lactobacillus, this beer has been re-fermenting in a neutral oak barrel since fall of 2014. In keeping with the traditional solera method, small quantities have been extracted and replaced with various Red Brick beers throughout the aging process, adding subtle layers of flavor from each component. The result is a tart and nuanced blend with a vinous profile. Notes of under ripe peach, green melon, lemon, and American oak couple with moderate acidity and funkiness to create this complex yet balanced American Wild Ale.
