After Cascais and Monte Estoril, Aryelle Bastos’s project has opened its third address, continuing a journey that began on wheels and still has room to grow.

Two years after it began serving speciality coffee from a bicycle at Mercado da Vila in Cascais, The Happiest Coffee continues to grow. The brand founded by Aryelle Bastos opened a new space in Parede on 12 April, the project’s third home after its debut on wheels and its move to Monte Estoril. “It will be two weeks,” said the founder, explaining that the arrival in Parede answers one clear goal: “to increase our presence along the Linha with more quality coffee options for people”.
The story began in 2024, when Aryelle Bastos transformed a bicycle fitted with a coffee machine into a small mobile counter. The idea came after seeing this kind of concept in other European countries and wanting to bring to Portugal a model that was more flexible and closer to people. The project first settled at Mercado da Vila and quickly gained regular customers, drawn both by the informal concept and the speciality coffee.
Since then, growth has been gradual, but carefully considered. “The Parede opening is part of The Happiest Coffee expansion plan, which aims to reach 10 shops and, in the future, who knows, perhaps evolve into a franchise,” the founder revealed.
This new space stands apart from the previous ones by allowing a more robust operation and a broader menu. “We have a more varied offer of dishes made fresh to order,” explained Aryelle Bastos.
Among the menu highlights is the exotic focaccia (€9.80), currently the best-seller, filled with hummus, blueberries and mushrooms. “We usually say that if someone is not very hungry, it serves two people,” she said. Bagels have also arrived as a new feature of this shop, including an avocado bagel (€7.30), alongside scrambled eggs on toasted bread (€6.80), yoghurt with granola (€6.20), and a full breakfast for €5, with naturally leavened toast, butter, jam and cheese.
As for drinks, coffee still leads customer preferences, but newer options are gaining ground. Protein drinks, created partly with the nearby gym in mind, have proved especially popular. Among them is the red berry and banana protein shake (€5). Another hit is the matcha fragola (€6.20).
For now, no further openings have been confirmed, but the intention is to continue strengthening the brand’s presence in Cascais, reaching areas such as Guincho or even Colares in Sintra. And one long-standing ambition remains on the table: bringing the concept to Porto.
