With the 400-year dynasty of Chaya restaurants in both California and Japan resting on his back, the stakes are high for this two-night only Kaiseki-style dinner. Celebrating Chaya Beverly Hills’ 30th anniversary, Kozuka from Chaya Japan will team up with Shigefumi Tachibe, the exec chef of Chaya Beverly Hills for a seven course pre-fixe menu that will feature usual Japanese ingredients—sea urchin, julienned kelp, Hokkaido halibut and lotus root mochi...no passport required.
