If you're going out in the Barrio de Salamanca, you might as well do it in a big way. Maybe that's what crossed the mind of Paco Quirós, head of the Cañadío Group, which is synonymous with quality raw materials and the best squid in Madrid. And there they are in the heart of the charismatic Grassy building, overlooking Gran Vía at Alcalá. At La Primera they serve other great classics from the group such as the potato omelette and the cheesecake. But as each member of the family has its own character, the menu here features a bit of what's popular locally (lacón pork and egg croquettes, Russian salad, Santoña 3/8 anchovies with roasted peppers, and lasagna bolognese with parmesan crips) and a bit that showcases product and technique in dishes such as the vegetable stew, Rula hake and the 'callos a la montañesa (tripe).
