Brad Kilgore’s new Design District cocktail lounge opens tomorrow

Brad Kilgore has set himself up for quite a busy Art Basel week. In addition to running the super-buzzy Alter and BRAVA, Kilgore is debuting his newest restaurant tomorrow, December 4. We’ve known about Kaido for a few months now. The cozy, Tokyo-inspired lounge includes both indoor and outdoor seating and will specialize in Japanese cocktails and food.

From the kitchen, Kilgore shall produce the sort of ambitious dishes he’s known for. A whirlwind Floridian Fugu will include lionfish sashimi, yuzukosho, caviar, basil seeds, crispy tapioca and ponzu. The Asparagus and Apple will be wrapped in a thin smoked pork belly and the wahoo comes in a smokey ponzu broth.

The drink list, created by Nico de Soto, sounds delightful as well. The Hakkaido Sour is made with soy washed Japanese whiskey, Kuritsu licorice syrup, lemon juice and kombu. The Hato is a combination of umeboshi tequila, grapefruit, soda and takesumi bamboo. There’ll be some rare Japanese whiskey options behind the bar too.

The restaurant is officially open for dinner service on Tuesday, December 4. Kaido is open daily: Sunday through Thursday from 4pm to midnight and Friday through Saturday from 4pm to 2am. If you can manage to snag a reservation this week, we are sincerely impressed.
