Food Envy: the dressed oysters at Salt & Brine

We’ve been eating a lot of food at Time Out Market Miami, and now we’re dishing on some of our favorite plates

When the craving for oysters strikes, there’s little we can do to stop the train. This nagging urge typically arrives in tandem with the hotter summer months, when all we want is to take turns slurping briny half-shells and sipping dry rosés or perfectly dirty martinis.

While there’s not much that can beat a freshly shucked, naked oyster spritzed with lemon juice and splashed with a bit of mignonette sauce, we’re always open to enjoying this humble aquatic delicacy in new and inventive formats.

That’s why when we ordered a half-dozen raw oysters from Salt & Brine at Time Out Market, we happily opted to dress up our little cuties in some fancy new clothes. We tried all three of the fresh seafood counter’s dressed oyster options, and each was its own unique flavor explosion. Allow us to elaborate.

The Russian-dressed oysters begin with a petite, ever-so-light dollop of yuzu creme fraiche, followed by plum wine mignonette, caviar and a sprinkle of smoked sea salt, resulting in a smoother, slightly less acidic bit of heaven in your mouth. The cucumber tobiko option brightens things right back up with tangy pickled cucumbers, wasabi tobiko and red radish.

For us, though, the star of the set is the kimchi crab dressed oyster. The mixture of crab, habanero-onion escabeche, toasted sesame and miso ponzu just adds a whole other layer of umami that brings the entire oyster experience to a new level.

Whether you go for East Coast, West Coast or a combo of the two, you can add any of Salt & Brine’s three dressings to your oysters for just a dollar extra each. We’re not knocking the cocktail sauce and horseradish classics, but if you’re feeling a little bit decadent or up for trying something new, the dressed oysters at Salt & Brine are a must.
