What’s the vibe?
Two ‘bonsoirs’, two beanies, two beards – and one cracking corner bar! Former colleagues at Bar Chaumont, William Fior and Hugo Simonet, have swapped the polished vibe of a four-star hotel for the more laid-back feel of a neighbourhood hangout – in this case, the ultra-cool Rue Saint-Maur. The mystery of the frog-themed décor (especially the Matsumoto Hoji prints) is cleared up pretty quickly: both owners have frogs tattooed on their arms and thought it’d be funny to plaster the theme everywhere.
What’s on the menu?
The cocktail list features eight well-crafted creations, all very reasonably priced by 2025 standards (between €11 and €13). The Capi Comeback brings together bourbon, umeshu, genmaicha tea, Fernet and verjus – a fresh, acidic mix where the tanginess takes the lead. The clarified Ull (which means ‘apple’ in Gaelic – but of course you knew that) blends whisky, Chartreuse and absinthe, and delivers a long, lingering finish after a bright apple-forward first sip. Bonsoir Bonsoir has all the makings of your new go-to apéro spot – ideally before dinner at Le Servan, right across the street.
