One of the biggest trends sweeping through the Japanese fast-food world in 2020 is vegan food, from Coco Ichibanya’s limited-time vegan soup curry earlier this year to FamilyMart’s recent release of its first certified vegan donburi. The latest entry in the growing list is Mos Burger’s new Green Burger. Yes, even the bun is coloured green.

The juicy plant-based burger features a thick patty made of soybean-based vegetable protein with konyakku (yam) and cabbage. It's served with sliced fresh tomato, shredded lettuce and a punchy tomato sauce, all encased in a distinctively green-tinged bun. The bread gets its green hue from spinach puree, which also adds a slight sweetness.

Burger-loving vegans may have noticed that Mos Burger already offers a soy-based burger, but although it contains fewer animal products, this predecessor isn’t fully vegan – there are still trace elements of egg and animal products.

In contrast, the new Green Burger is completely free of meat, fish, eggs, dairy and other animal-derived products. You can get it for just ¥538 (plus tax) at these Mos Burger outlets: Osaki, Roppongi, Akihabara Suehirocho, Omotesando, Nishi-Ginza, Hankyu Oimachi, Ginza Nine (available from April 1), Haneda Airport Terminal 4, and Enoshima.

Mos Burger has been a trailblazer of Japanese burgers since opening in 1972. In the 1970s, the company released a teriyaki burger made with miso paste and soy sauce. This homegrown burger chain also pioneered the rice burger, with grilled rice patties in place of burger buns – perfect for the gluten-averse diner.
