Thursdays in November, Cookie will be at The Dep making Ajiaco, a hearty traditional Colombian chicken soup, along with her famous empanadas and cookies for dessert.

A distinctive dish from the Colombian capital of Bogota, Ajiaco is full meal in a bowl. It features chicken, corn on the cob and potatoes in a thick broth, garnished with capers, creme fraiche and cilantro, served with avocado and rice on the side.

Alfajores + Agua de Panela
A warm traditional wintertime drink made with raw sugar and spices, served with one of Cookie's famous alfajores cookies - a buttery shortbread filled with arequipe (a Colombian dulce de leche caramel) and rolled in coconut.

Cookie Martinez earned her name making delicious cookies, including great vegan and gluten-free options – with an eye towards organic and local ingredients and creative South American flavours. She has also participated in innovative food projects like the Future Food Salon, creating a variety of dishes incorporating insects, and her spicy guava sauce recently won top honors at the Empanada Throwdown at the Ritmo y Color Festival at Harbourfront Centre.
