KRUNGSRI EXCLUSIVE treats its prestigious customers to an exclusive dinner with Michelin starred chef

In recent years, Bangkok has seen a fair share of visits from world-renowned, award-winning chefs from around the world. One of them is Stéphane Buron, one-half of the mastermind duo behind the two-Michelin-starred Le Chabichou, a gastronomic restaurant in the luxury resort hotel of same name in the French Alps. The culinary master took over the kitchen of VIE Hotel Bangkok’s La Vie Restaurant to show off his French cuisine with a modern twist between 31 October and 3 November.

KRUNGSRI EXCLUSIVE, an exclusive program tailored for prestigious customers of Krungsri Bank, hosted a special event that offered some of its KRUNGSRI EXCLUSIVE members an opportunity to savor the seven-course creation of Chef Buron who presented the Thai foodophiles with a marriage of organic imported ingredients and cutting-edge twist on the second night of 1 November.

Kicking off the dinner was the amuse-bouche made of crab served in sweet meringue and topped with lemon caviar and oyster leaf. The culinary journey then went on with starters: the tuna tartare with caviar, sudashi gel made of Japan-imported lime and peas; soft-boiled egg cooked in 64-degree-Celsius warm water so perfectly that it boasts gelatin-like egg white and rich-and-creamy egg yolk, served in truffle and milk emulsion topped with mushroom and Lardo di Colonnata bacon.

The mains consisted of turbot served with Meuniere sauce made of fresh celery and apple and assorted vegetables, topped with yuzu and ponzu sauce; and the free-range organic chicken with ravioli stuffed with herbs, cheese and truffle and port wine and cognac sauce.

Chef Buron wrapped up the night with a series of desserts: Chlorophyll, a pre-dessert with parsley blanc-manger, fermented milk and herb sponge, and, Opera Revisited, a reimagination of famous French sweet treat Opera cake, and the chef’s own favorite, featuring almond sponge cake soaked with coffee syrup, chocolate ganache and coffee cream and is made in a teepee shape.
