It’s not often that we invite you to try something new beyond the concrete jungle of Bangkok, but Prod. is one of the few exceptions.
There may be plenty of seafood restaurants in the popular seaside town of Pattaya, but this new restaurant stands out, thanks to its commitment to reinventing good ol’ Thai comfort food into fine-dining fare—making it the very first place in this town to present seafood dishes in this style.
Each dish that’s served at Prod. takes inspiration from simple Thai recipes, such as deep-fried fish or a spicy salad, and turns them into modern offerings.
Prod. also differentiates itself from its peers through the use of the “fin-to-scale”approach, where all parts of each fresh ingredient well selected from the local producers (think fish tails or prawn shells) is used to create gastronomic elements that will surprise you at every bite.

Making an unforgettable first impression is the spicy prawn salad with lemongrass and betel leaves in a golden tartlet. You need to crack open the tartlet (which is very fun to munch on) to get to the salad. The prawns used in this dish are completely deshelled. But don’t worry, Prod. has other purposes for the shells.

For more crispy thrills, order the deep-fried sea bass. A lot of technique is involved in making this dish. First, the fish is wet-aged for three days and then deep-fried in the Japanese style, where boiling-hot oil is poured on the skin. The result is a juicy and meaty piece of sea bass with earth-shatteringly crispy skin.
If you’re familiar with Thai food, then you must have tried flaked catfish salad at least once. And if you’re a seafood lover, you must have enjoyed it. At Prod., snakeskin gourami is substituted for the catfish for a dish that’s just as savory and crumbly, but perhaps meatier. Boosting the flavor of this dish is a tom kha kai (Thai coconut soup) custard made from the fish’s bones.

The shrimp cakes also deserve a huge chef’s kiss. Every part of the shrimp is utilized for this fan favorite. The meat is mashed to an airy paste, giving the cakes a soft and pleasingly bouncy texture, while the head and tail are deep-fried. Don’t forget to dip the cake in the salted egg sauce.
After filling up on savory delights, wrap up your meal with a coconut ice cream infused with a scented candle fragrance. This dessert may not be way out of the Thai sweet treat playbook, but Prod. adds some egg yolk crumble and Rocher Coco to give it a modern tweak.
There are not too many places in Pattaya like Prod. Simple seafood dishes are presented with exciting flavors and new elements of cooking to offer a new dining experience at this coastal town. We would say Prod. is all about serving fine-ding cuisine that’s accessible for everyone!
