Jason Licker, former dessert chef of the now-defunct Ku De Ta Bangkok will be taking over the sweet kitchen at Peppina for three days, starting today, 31 May until 2 June. Licker is also the author of the cookbook, Lickerland, in which he demonstrates his famous Asian-inspired desserts.
During these few days, he will be whipping up five desserts showcasing a subtle sweetness while balancing contrasting notes, as in the lemon mascarpone cream encased in blueberry mousse, served with milk crumble, or the refreshing basil and strawberry mille-feuille, served with whipped balsamic for slight acidity. For chocolate lovers, Licker also whips up The Rocher Cappuccino — his version of Ferraro Rocher with chocolate cake soaked in milk chocolate cream, topped with Frangelico foam.
