Cusser’s Roast Beef & Seafood comes to Time Out Market Boston

Our best-in-the-city culinary hub is now home to Chef Carolyn Johnson’s inspired lobster rolls and gourmet roast beef sandwiches.

Here's the scoop on the latest culinary jewel to join the best-of-the-city lineup at Time Out Market Boston: Cusser’s Roast Beef & Seafood is now serving its inspired lobster rolls and gourmet roast beef sandwiches at the Market!

For nearly a decade, Chef Carolyn Johnson and Co-Owner Ian Calhoun have left a lasting impression on greater Boston’s culinary scene with the award-winning 80 Thoreau in historic Concord as well as Mooncusser Fish House and Cusser’s Roast Beef & Seafood in the Back Bay. Prior to opening her own ventures, Johnson worked in legendary Boston kitchens such as Salamander and Icarus, and moved her way through the ranks over a seven year tenure at Rialto.

At Time Out Market, guests can enjoy gourmet versions of the North Shore’s beloved roast beef sandwich alongside other coastal classics taken to new heights. Cusser’s Roast Beef has transformed iconic dishes by carefully redeveloping each key component in dishes such as their signature lobster rolls—served either warm with lobster beurre rouge or cold with tarragon and grainy mustard mayo, roast beef sandwiches with rare wagyu, proprietary sauces and homemade onion rolls, and the pescatarian-friendly seafood chowder with skate broth and smoked scallops.

“Cusser’s Roast Beef& Seafood is the fun little sibling to Mooncusser Fish House and we are very excited to keep growing and join the culinary lineup at Time Out Market Boston,” says Chef Carolyn Johnson. “We started Cusser’s in 2018 out of a takeout window and are now thrilled to share the concept’s greatest hits at Time Out Market Boston, where guests can experience our very personal take on New England classics from land and sea.”

We have taken iconic dishes broken them down into components and then gone through and developed each of them, explains co-owner Ian Calhoun. On the lobster roll side we have developed our own potato rolls and made them into classic split top buns, and mayo gets embellished with tarragon; on the roast beef side, we first tasted many cuts/grades of beef before settling on wagyu eye rounds, we built our own onion roll from the ground up, we created proprietary BBQ sauce and mayo; for the seafood chowder we discovered that skate really enhances the body of the broth (important since we don't use flour), and we substitute smoked scallops for bacon so the dish is pescatarian.”
