Guinness opened its second U.S. brewery in Chicago in 2023, bringing a sprawling 15,000-square-foot venue to Fulton Market. It’s more than just a facility for brewing Irish stout, though—it’s also a taproom, restaurant and bakery. The tap list features pours you’d expect like Guinness Draught and Extra Stout, alongside a host of locally-brewed offerings, such as the Kinzie Street Pale Ale and Corn Maize Cream Ale made with corn from Illinois’s Iroquois County. Beer cocktails are intriguing options as well, from the Coffee Break (Extra Stout with Pour Souls A.M. Radio) to the Summer in Chicago (Corn Maize Cream Ale with Pour Souls Pink Pigeon). Of course, you’ll want to pair the drinking with some food, so the kitchen puts out a selection of globally-inspired bites. Fried cheese curds and Guinness barbecue wings are solid versions of standard bar fare, but we suggest venturing further into the menu for items like corned beef croque madame, chickpea coconut curry and Caribbean shrimp fried rice. Talk about range!
