We at Time Out agree with the rest of the world: There are few things in life more calming, satisfying and near perfect than a neat glass of whisky. Fuss-free. Pure. Untouched. Bliss. But that doesn’t mean we sometimes don’t feel like getting a little adventurous.

There are bartenders across the country doing pioneering things with our favorite golden liquid—serving it in ways that challenge convention, mixing it into creative cocktails. To celebrate that innovation, we teamed up with Glenfiddich—which tastes great all on its lonesome or as part of something more daring—to highlight three Chicago speakeasies leading the change-up charge.

Find your fortune—and a good drink—at this bar, where you can order from tarot cards (yes, the tarot-like cards are the menu!). Some of the featured ingredients will be drawn straight from bartender Jill Anderson’s garden. And, history buffs take note: This is an original speakeasy—the space was around during Prohibition—so it’s like stepping back in boozy time.

Lemon juice

Vanilla liqueur

Egg white

Shake, strain in to a coupe. Serve with candied ginger and lemon twist.

Here, they will make your innovative whisky concoction right at your table (seriously, why aren’t more people doing cart service—so cool!). Hardcore whisky lovers should know they can buy bottles and store them in a locker here; dabblers should know the place is pretention-free and they cater to all levels of whisky fan.

Make the Huntsman

2 oz Glenfiddich 14 yr scotch

1/2 oz punt e mes vermouth

1/2 Giffard apricot liquor

1 dash of Angostura Bitters

Combine all ingredients into a mixing glass, add ice and stir 20-25 seconds or until drink is cold. Using a smoking gun, fill a decanter with a hickory wood and roobios smoke. Strain cocktail into decanter and stir the cocktail for a few seconds to infuse with smoke. Then pour into a cocktail glass. Enjoy!

To make roobios hickory smoke, combine three table spoons hickory and two tables spoons of loose leaf roobios tea. Store in a non-reactive container.
