Now that summer is in full swing, it's definitely time for for some refreshing cocktails to accompany the rising temperatures. Dove's Luncheonette's summer menu is tapping on-trend mescal and tequila as the bases for its latest menu of pretty cocktails.

The El Caballo is a cherry, lemon, tarragon and Herbsaint-based drink with Arette Reposado—a balanced drink for the tequila lovers. The Violet Spring reminds us of something we'd usually see with gin, but the use of Xicaru silver mescal cuts the citrusy cocktail with Creme de Violette, grapefruit, lemon and bitters.

It's no surprise that the bitter Campari and Aperol pair well with tequila (as demonstrated by all those tequila-based negronis we keep seeing), and the El Rio Grande continues the trend with Lunazul Blanco, Dolin Blanc vermouth, lime and orange. Earthy and herbal are the high notes in the Cool Gent, with Arette Anejo, Solera 1847 Cream Sherry, Cynar and Angostura bitters. A punch rounds out the list with Lunazul, iced tea, lemon, demerara sugar and blackened peach. The new menu is available now (or whenever you're looking for an excuse to cool off).
