Hot Doug's is making duck fat popcorn

Doug Sohn may not be actively working in a kitchen anymore, but the Hot Doug's namesake still comes and goes in kitchens throughout Chicago.

Hot Doug's latest creation can be found at Berco's Popcorn in Lincoln Park, and it doesn't involve encased meats whatsoever. Sohn instead teamed up with Berco's owner Matt Bercovitz to make duck fat popcorn, a resurrection of his famed duck fat fries that blends duck fat and gruyere cheese. 

"Hot Doug's Duck Fat Delight" is available through Valentine's Day and comes in large ($15), gallon ($35) and two-gallon ($60) portions. On Saturday, Sohn pays a visit to Berco's Popcorn from 2–4pm to inaugurate the popcorn's sale. A portion of the proceeds will benefit the Intonation Music Workshop, which provides music lessons and instruments to Chicago students.

This collaboration comes after Sohn teamed up with Publican Quality Meats for an event that, just like in Hot Doug's brick-and-mortar days, drew a line far, far down the block.
