Mercadito's Paul Sauter takes over the Local's bar as April's guest bartender. Sauter brings along his You Make Me Bomba cocktail ($13), made with Brugal Extra Dry Rum, ginger syrup, lemon juice, cucumber puree, yucateca and mint, which will be available throughout April. A portion of the proceeds will be donated to Un86'd, a Chicago-based charity that gives monetary help to restaurant professioanls in need.
