Charles Joly at the Aviary

Considered a classicist during his six years behind the bar at the Drawing Room, Charles Joly wasn’t the most likely pick to take over when the Aviary’s opening “bar chef” Craig Schoettler left. In the nine months since he joined the Aviary, Joly has tweaked fan favorites (capturing bitters within the ice of the famed In the Rocks cocktail), vastly expanded the beer selection and embraced the modernist techniques of the moment (flash-freezing ingredients like basil and tomato). He may have been a cocktail historian in his past life, but now Joly is clearly looking toward the future. 955 W Fulton Mkt (312-226-0868).
