James Spillane of Armitage Pizzeria

When Spillane returned to the pizza scene following a split with Coalfire, he did so with this no-frills Lincoln Park slice shop, where he delivers two archetypes of the pizza world: the East Coast slice shop and the no-nonsense proprietor. Both are executed beautifully. Wiry and handsome and resembling a cast member of Grease, Spillane puts out fire-kissed pies with bubbly crusts—and he does it in a way that subtly suggests he’s doing you a favor. The shtick works, mainly because everybody is too focused on the pizza to care. 711 W Armitage Ave (312-867-9111).
