There are cruel realities about farmers’ markets. The big crowds. The big strollers. The big dogs who stick their snouts in your basket. And the cruelest reality of all: If you don’t show up at 7am, the best stuff will probably be gone. Usually this means you lose out on the most pristine radishes—no big deal. But in the case of Flora Confectionschaussons, it’s a more serious situation. Flora Lazar devised the pastries (her company’s first foray into baked goods) as a way to show off her confitures, or preserves, like peach-thyme, and rhubarb-rosemary.
