Phoebe Walters, the owner of Lakeview’s Phoebe’s Cupcakes(3327 N Broadway, 773-868-4000), remembers the day one of her favorite customers, toddler Keira Collins, came in to order one of the bakery’s most popular items—the Funfetti cupcake—for the first time. “She [had always] wanted one so badly,” Walters says. “But she was allergic to eggs, so she couldn’t have any of the cake batter.” Phoebe’s features about 15 flavors of cupcakes daily from its list of 200 flavors, but most were off-limits to Collins, including the festive variety she (and many other young customers) ogled the most. Luckily, she grew out of her allergy and returned as soon as she had a green light from the doctor. “She came in and was so excited,” Walters says. “It was like she was finally able to have what she’d been craving for years. She came up and gave me a hug afterward.”
