Muy caliente is more like it—enchiladas del mar, packed with shrimp, scallops and crab, sounded innocent enough, but the guajillo pepper sauce crept up on us, and pretty soon we were sweating bullets. Puerco en chile verde con nopales, which paired luscious pork with cactus, proved a much more mild choice.
