Jana Buchtova knows that Chicagoans are well-traveled people, and with her European-style deli, she hopes to remind them of where they’ve been. She’s likely to succeed: Her breads are imported, par-baked, from Europe, and she’s using them on her panini, including one that layers prosciutto, fresh mozzarella and an olive tapenade. She also has a whole line of imported meats and cheeses and serves Italian coffee drinks using Lavazza beans.
