Korean barbecue joints distinguish themselves by the quality of their meat, marinades and side dishes (banchan). This mainstay nails all three. Strips of tender beef (kalbi) get a garlic-soy-sesame oil marinade, while slices of pork (bulgogi) are saturated with a similar, but spicier, mixture. While your meat sizzles, sample your way through banchan such as pickled turnips, kimchi, eggy potato salad and tofu skin with green chili and a big bottle of Korean beer (OB or Hite).
