The first rule of building a Chicago dog? No ketchup. Ever. 

Other than that, it's pretty simple: Start with a poppy-seed bun and an all-beef hot dog (preferably Vienna beef), top it with mustard, chopped white onion, relish, tomato wedges, a Kosher dill pickle, sport peppers, and a dash of celery salt. Nothing more, nothing less—and for the love of god, never with ketchup.
