New chef, new me: Beloved Split riviera restaurant Brasserie on 7 reopens with exciting news!

With arguably one of the best locations on the Croatian coast - the Split Riviera - restaurant Brasserie on 7 has officially reopened. On March 1, Brasserie off 7 kicked the 2021 season with some super-exciting news.

An impressive new Chef of Cuisine

A new Chef de Cuisine has joined the team: ultra-talented French-American chef Alexandre Ange.

"After such a tough 2020 for the tourism and hospitality industry, I am thrilled to welcome Alex as our new Executive Chef. Sparked with passion for Mediterranean cuisine, we are absolutely delighted that Alex is joining our team, thus helping to further develop our culinary story!" Maria Mustapic, one of the restaurant's co-owners, says.

Chef Ange underwent classical training in French cuisine.

Before moving to Split with this family, he spent the past 12 years working in some of France and the United States' best restaurants and under some of most famous chefs. These included:

  • Thomas Keller and Philippe Tessier at The French Laundry in California's Napa Valley
  • Joshua Skenes at Saison in San Francisco
  • Daniel Boulud at Restaurant Daniel in New York
  • Joel Robuchon, the chef with the most Michelin stars in the world, at Paris' celebrated L'Atelier

Bringing his impressive background, knowledge, and creativity with him, what is Chef Ange's vision for revamping Brasserie on 7's already-fabulous menu?

"I strongly believe in using local ingredients and supporting Dalmatian producers. My vision is to bring our guests an exceptional and memorable dining experience by introducing a renovative food menu that satisfies the taste bud of local and international guests", Ange Chef explains.

Changes will be seen on the menu as soon as this spring, as Brasserie on 7's Front of House Ivan Rabadan says:

"Delicious exciting changes are coming to our breakfast, lunch and dinner menus - including vegetarian and vegan dishes, but we will let you discover them when you visit us at Brasserie on 7 in Split this season, we are very eager to reopen on March 1st".

An already-iconic restaurant made even better

Brasserie on 7 has been in business for seven years, soon becoming internationally known for its top-notch meals and dazzling setting on the Split riviera overlooking the Adriatic Sea.

Behind the restaurant is dynamic duo Maria Mustapic and Korana BucicBorn and raised in Australia, the two childhood friends returned to Croatia in 2006 and opened Split's first registered hostel. They soon continued their streak of success, opening a second hostel, Charlie's Backpackers Bar, Zinfandel Food & Wine Bar and, during March of 2014, Brasserie on 7.

Since its establishment, Brasserie on 7 has been run under the competency of already-mentioned Front of House Ivan Rabadan. Also part of the team is multi-award-winning barista Matea Vuletic, and an entire in-house bakery operation team spearheaded by Ivana Bradaric.

The entire restaurant staff never stops learning and improving their skills, by taking on professional experiences in Zagreb, London, and Marseille, as well as attending gastro workshops and courses. Their hard work and drive for excellence won the team Gourmet Expo in 2019.

"Our goal, as always, is to provide a memorable dining experience for each and every one of our guests. And with the addition of Alex [Chef Ange] I am confident that Brasserie will reach new heights", says Bucic.

Brasserie on 7 is an important part of the community in other ways, too. They contribute whenever they can, including fundraising up to 90,000kn for Split's children's ward. During the COVID-19 pandemic, both Brasserie on 7 and Zinfandel restaurant took part in preparing food for medical staff. Most recently, the restaurant's chefs joined 300 others in cooking for the citizens of Petrinja, who were shaken by a devastating earthquake in late 2020.
