A rockstar style, Michelin stars in his resume and restaurants all over the world: that's the Catalan chef Sergi Arola in brief. He runs two locations under his name at the Penha Longa Hotel. The cuisine is based on hot and cold tapas, some of them of his own devising – such as his iconic, sophisticated patatas bravas – and other recipes uniting Portuguese and Spanish traditions, with Asian flourishes (the chef is a true globetrotter too).
