Aron Vargas is a disciple of Takashi Yoshitake (formerly of Aya) who launched his own restaurant (as did the sushimen from GoJuu, Kampai and Kanazawa). At his restaurant in the Praça de Espanha, whose only fault is being a bit too cold, the most purist Japanese tradition is followed. Fish is always the protagonist, but the restaurant has plenty of variety: tuna, sea bass, bream, octopus, squid and eel, everything always impeccably cut.
Time Out tips:
– A second Aron Sushi is at the 31 de Janeiro market.
– Needless to say, both restaurants get their fish from the Açucena Veloso stand.
– Make reservations: it's a small place.
