For 17 years, the Fortaleza do Guincho was a standard-bearer for French cuisine in Portugal. Some German gastronomy was also mixed in by consulting chef Antoine Westermann, who left the restaurant in 2014. The next year, executive chef Vincent Farges also departed, leaving the kitchen to Cascais-born Miguel Rocha Vieira. The current chef already had a Michelin star in his resume, earned at Costes in Hungary, and he kept it here. His cuisine is closer to Portugal and to the sea, whose waves slam the rocks right next to the restaurant.
