Tomoaki Kanazawa was invited to Portugal in 1993 by the Japanese ambassador; he worked at Aya, founded Tomo (where he gained a legion of devotees) and, finally, launched his dream project: a restaurant with just eight seats at the counter, with a very seasonal kaiseki (tasting) menu. The chef is a meticulous scholar when it comes to choosing and handling each of the ingredients on offer. That is why you will see him hard at work on each dish. Expect plenty of good seafood and several produce and techniques you had never heard of.

– Menus have prices between €60 and €150, which might be seasonally adjusted.
– Online reservations must be booked at least three days in advance.
– The menu is a handwritten in Japanese in a piece of tracing paper (there is a translation).
