Charles Joly, Diageo World Class 2014 champ and two-time James Beard Award Bartender of the Year, takes over the jiggers and ponies at Gibson for his guest shift. On the menu are four of the man's signature cocktails ($23 each), including his Chicago Fizz, made with Ron Zacapa rum, Ruby port, lemon juice and egg white, and the fizzy Moko Nui with Don Julio Reposado tequila, Carpano Antica Formula vermouth, Fernet-Branca and champagne.
