Carnivores can also look forward to highlights such as the British Red Poll prime rib, grass-fed lamb saddle and Dingley Dell pork racks fresh off the wood-fired spit roast.

Under the expert guidance of chef Albert Tan, the Halal-certified StraitsKitchen whips up a uniquely Singaporean line-up of Chinese, Malay and Indian fare. Kick off the last evening of the year at the seafood bar, which features poached tiger prawns, Boston lobsters, Alaskan crab legs and freshly shucked oysters. If it’s heartier dishes you’re after, the lobster masala, skindari raan (lamb leg with spices) and Malay-style oxtail soup should do the trick. And you can’t go wrong with the classic Peking duck rolls, either.

Carving stations all around the restaurant dish out porchetta with rosemary and garlic, roasted Australian grain-fed rib-eye, and salt-crusted barramundi, while handmade pastas, risottos and wood-fired pizzas make for great sharing platters, too.
