With chef Carles Gaig leaving La Ventana to whip up his signature Catalan fare at his new eponymous Restaurant Gaig, this tranquil spot tucked away in Dempsey Hill welcomes new head chef Toni Valero from Coquo Restaurant and Wine Bar in Kuala Lumpur. Valero steers the restaurant in a new direction – moving away from classic Spanish cuisine to present a gastronomic fine dining menu serving innovative modern European dishes with both Spanish and Southeast Asian flair inspired by his heritage and travels. Think dishes such as scallop served on top of a cauliflower pandan purée and charcoal grilled secreto iberico paired with pineapple jus and grilled pineapple.
