Ellenborough Market Café marinates premium tom turkeys (from $170/eight to ten people) in buah keluak, laksa and Hainanese chicken rice herbs and spices. The turkeys are said to be selected for their higher proportion of white to dark meat, helping the marinades seep deeper into the bird. These Peranakan-flavoured turkeys will also be served at Ellenborough's nightly Christmas buffets on a rotational basis.
