And to mark this season, Mexican hospitality group Super Loco Group is teaming up with Australian plant-based food brand, Fable Food, to present a slate of environmentally-conscious menus and activities during its first-ever Loco Earth Month.
The food we put on the table undoubtedly has implications for the environment. From April 4 to 30, support sustainable food sources and practices by digging into a four-course carbon-conscious dinner menu created in partnership with Fable Food. The star of the show is the brand's sustainably-sourced plant-based meat alternative made from shiitake mushrooms. This you can try in the Fable Al Pastor Taco ($10), which has al-pastor marinated Fable shiitake mushrooms, crispy kale, watermelon radish, roasted corn and pickled red onion dressed in chipotle mayo, wrapped in bamboo ash tortilla. Other dishes include garden flautus, sustainably farmed barramundi, a beautiful pomegranate tres leches, and a tropical zero-waste cocktail made with upcycled fruit waste.
And to get your minds engaged on topics such as minimal waste, urban farming and plant-based cooking, Super Loco Group has also teamed up with like-minded lifestyle brands in Singapore to offer sustainability-themed workshops.
