Chef James Sharman, a protégé of Tom Aikens with a stint at Noma in Copenhagen, leads the nomadic One Star House Party, a team of chefs who embarks on a journey around the world to set up a pop-up eatery in chosen cities, featuring innovative fare whipped up with exotic local ingredients.

In the meantime, they are in Thailand’s countryside in search for the ingredients that will make their way into the pop-up kitchen at Latitude Lounge & Bar at the Banyan Tree Hotel (0 2679 1200, B4,190) as the third pit-stop following Beijing and Ho Chi Minh City from 27 Nov to 3 Dec. Reservations open today (16 November) at 12:00. Here’s some snippets on their journey in Thailand.

After Bangkok, they will take it to the new high and conjure up a kitchen at the Everest Base Camp in Nepal. Plus, they will invite 15 diners to join their 14-day hike to the base camp and sample their take on Nepalese cooking centerpiece.
