Wine bars are everywhere. Sake bars are increasingly common. But Sato Sammosorn is betting on something much closer to home. Chef Chalee Kader's latest project celebrates more than 40 labels of sato sourced from across Thailand, pairing them with Thai dishes from a team familiar to fans of E-San. Grilled dishes cooked over binchotan charcoal sit alongside regional curries, stir-fries and playful snacks, while the drinks programme introduces guests to bottles they are unlikely to encounter elsewhere.
