The Negroni, that bittersweet drink that's equal parts gin, sweet vermouth and Campari, is one of the great classic cocktails and it (deservedly) has its own celebratory week. Put on by Campari and Imbibe, Negroni Week is held June 1–7, when bars will offer their own version (or multiple versions) of the drink, then donate a portion of the proceeds to the charity of their choice.

More than 100 Chicago bars and restaurants are participating. The full list is here, but here are a few spots to seek out.

The Broken Shaker, the brand new Miami import located in River North, kicks off Negroni Week a day early, with a party from 8-10pm on Sunday.

Balena will be serving up Negroni floats for the week.

Sable Kitchen & Bar is serving up six Negroni variations, as well as a Negroni on tap. That includes a spicy variation, Negroni con Toro, made with tequila, Ancho Reyes chile liqueur and China-China Amer Liqueur.

Frontier is hosting a Negroni Week Oyster Cookout on June 7 at 3pm. Expect $1 raw oysters, $2 char-grilled oysters and $8 gumbo plus $7 Negronis, $3 Negroni Jell-O shots and a $30 Negroni punch to share.

312 Chicago will be serving a few drinks, including a Nutty Negroni, with Amaretto, Montenegro amaro, Cynar and black walnut bitters.
